
Shredded Chicken

- Chicken thighs or breasts (Thighs with skin on will have the best flavor, if you are scared of meat, start with breasts or no skin no bone thighs
- Sea salt
- Lemon, lime or apple cider vinegar
- Cajun seasoning (or any seasoning you fancy)
Instructions
- Turn the InstaPot on slow cook
- Sprinkle a tablespoon of olive oil on the bottom of the pan.
- Place raw chicken in the crock pot and sprinkle with sea salt and cajun seasoning.
- Cover with a lid.
- Allow to cook for 4 hours, depending on your day this could go less or more.
- Shred the chicken 30 minutes before eating, remove the lid & let it crisp up a little.
- I like to put the InstaPot on saute mode to encourage crispness. Sometimes there will be a lot of liquid in the pot… you can pour this out or allow it to evaporate.
- Once you have reached your desired crispness - enjoy with a side of veggies and a salad.
There are so many variations of this and it depends on how much meat you use etc... Try it out it is a staple in my house!
